Meatless Monday! Garden Soup, bread & Brie!

This weekend we had a couple get togethers and I was in charge of veggies and dip! (Woohoo! That’s the easiest!) At the end of it, I crammed the remaining celery, carrots and snap peas into a Tupperware container and thought….soup. Yes! …. Okay…So, what I really wanted was bread with Brie… But somehow I needed veggies and the soup completed the meal! 

First stop.. The freezer section.. Udi’s has multi grain and French bread that are gluten free. Tonight I went for the multigrain! yum!

Second stop… Brie…(yummmmm). I’m pretty sure my kids think Brie is butter. 

Third.. Kitchen

Here’s what you need

1 onion – chopped- quickly to avoid the crying

2 T garlic

1 sweet potato chopped

Toss these in big pot with some olive oil and sauté a few minutes on medium high

Add

1 cup shredded or coarsely chopped carrot

Leftover celery- chopped – maybe 1/2 c?

Leftover snap peas- cut into thirds about 1/3 cup

Any other veggies you have

Add to pot,

Add 3 T Italian seasoning

2 t salt

1 red pepper flakes

1 can garbanzo beans, rinsed

Sauté for about 10 mins

Add 4 cups dilute veggie bullion (2 cups bullion, 2 cups water) 

Cover and turn heat to low

15 mins before serving add 6 oz gluten free penne pasta

   
Serve and enjoy!❤️

Breakfast Strata! Yes! Gluten Free and Delicious!

Recently, I watched Bobby Flay cook up a scrumptious brunch (who doesn’t like to watch that man cook?..). Anyway, he made the most delicious looking strata …so, feeling inspired, I decided to try a strata for mothers’s day!

What you need:

Loaf of gluten free bread (I used  Udi’s sandwich bread)

1 onion

Whatever topping you want (spinach, mushroom, I used ham & cheese for the kids)

12 oz cheese of choice (I used cheddar)

10 eggs

1c whole milk (I think any milk would be fine)

Dash nutmeg

2 t parsley 

1 to red pepper flakes

Step 1: Carmelize sliced onion with red pepper.

medium heat & let them sit so they get beautifully browned…

Step 2:  Chop bread into squares and place in greased pan.

1-2 inch squares…the whole loaf

Step 3: Toss bread with onions and cheese, and any other desired toppings.

its going to be a long paddle to prepare for this yumminess

 Step 4: Mix eggs, milk and seasoning and then pour over bread.

whisking is therapeutic… go for it..

  

pour it all over submerging all the bread!

 Step 5: Cover, put in oven & bake at 350 for 40 mins. At this point, which I was at in 10mins, I suited up and headed out on a paddle! Breakfast will be ready when I get home!

It’s Chili in Miami! And you’re going to love this GF vegetarian dish!

It’s Good Friday… No school & I took the day off from work! A day of play dates, cleaning, pool time, dog washing….then I look at the clock and its 6:25! Aaaaahhhhhhh! It’s almost too late to order in! Fast & filling, I decide to make a vegetarian chili!

Let’s get this party started! 

In large saucepan add

2T olive oil, heat med- high

1/2 red onion

1 small onion

1/2 c chopped carrots

2T chopped garlic, sweat it out…. In Miami that seems like all we do…



its getting hot in here….



Add 4 small chopped sweet red peppers or 1 red bell pepper

3T Italian seasoning

Salt, pepper

3t cumin

6T chili powder

2t red pepper flakes

2 cans kidney beans, rinsed & drained

1 can corn, drained

2 boxes of Pom chopped tomatoes

3 squares dark chocolate (yep..THAT is the secret ingredient… Well chocolate & love…. ❤️)

Shhhhh….the secret ingredient….

Turn to simmer & let cook 20-30 mins.

Serve with Udi’s gluten free baguettes, cheddar cheese and, if you like ( of course you do!!! Fritos & sour cream)



did i tell you i lived in texas? well pour this over fritos & add a little sour cream….



My kids & their friends just gobbled that down… Great veggies, healthy dinner! Do it right! Make it a wonderful night! ✌️❤️

This, I’m making again…maybe tomorrow! Caprese sandwich with pesto spread!

I was recently at Deli Lane in South Miami. They do have a gluten free item of the day, and they have great omlets & salads, which are served all day…… Anyway, I digress…. While there I saw a Caprese sandwich on the menu and since then I’ve been dreaming of the perfect Caprese Sandwich! Gluten Free, of course. The recipe works for the gluten eaters, as well….but with the French bread by Udi’s (www.udisglutenfree.com), you’re not going to know the difference! 

So, here’s what you need:

5 minutes to Yum

French bread (I use Udi’s)

Organic tomatos 1-2

Mozzarella

Balsamic glaze

Pesto: in processor combine-  

pesto…need to sneak in some veggies? add spinach!

Fresh Basil- handful

Pine nuts 1/4c

Olive oil 1/4 c

Chopped garlic 1t

1t Salt, pepper to taste, red pepper flakes 1t

Slice and toast the bread at 400 for 8 minutes.  Liberally, smear on the pesto- top & bottom. Slice the mozzarella & tomato, layer onto sandwich. Top with balsamic glaze and a little basil. I served with Ore-Ida crowns (www.oreida.com).

maybe ill just eat this…the ends were uneven…whats a girl to do?

Phew! Done! Beautiful, delicious and satisfying! So colorful, they would make a great party platter! One thing is for sure…..I’m making these again! I hope you give it a try & enjoy! Make it a great night!

Miami Monday

I have today off (by off, I mean no OUT of home work). I have a home project to do, Garage reorganization. In this case I am going to call it garage transformation! I have a relationship with my garage, and like any relationship, it takes work… And sometimes fails. Today, I am tackling the leaning tower of wood shelves that recently have begun teetering forward with every moved container. Since I am a safety freak, I’m going to change them to a safer, more secure and dare I say…attractive garage system with the help of Garage Transformation & Organization (www.garagestoragemiami.com). 

After a morning of emptying the precarious shelving, and saying goodbye to many unnecessary and non functioning items (Goodbye Mr. Pumpkinhead…again…the last bulk trash day he was rescued by my children), I’m ready for a little coffee break!

My favorite gluten free breakfast when I’m in a hurry or just want a quick, delicious prepared meal is the Udi’s Gluten Free muffin. My fav item is lemon streusel, but after eating all 4 in one sitting, I no longer permit them in the house! So, blueberry it is! Love these muffins with a cappuccino!

Oh yes! Miami can make even a Monday look good!
