National Burger Day! Gluten Free & Vegetarian! 

What to make for dinner… My nightly dilemma… Sometime between 6 and 615 I’m in full panic mode regarding what on earth to whip up for tonight’s dinner. Tonight… The usual… Inspiration? Help? I ask every family member… And then I remember, it’s National Burger Day!!!! Yeah! I’m the only non meat eater in my household, and so I decide on Organic grass fed, hormone free burgers for the crew with American Cheese from Applegate on Potato buns, but for me? I’m going to make a black bean veggie burger on Udi’s toast with the same cheese and mushrooms over the top…..yum…. For real.

Step 1– throw the Ore Ida crowns (yes… I do have a minor addiction to these!!) in the oven and set to 425 degrees for 25 mins

Step 2

In processor add:

3 sweet mini peppers

2t chopped garlic

1/4 onion

1 green onion- process  

ninja time!!! oh yes!

 Add:

1 can black beans drained and rinsed

1 T chili powder

Black pepper & salt

2 T oregano- process until smooth

 

delicious, nutritious, pour all the ingredients in! easy!

 

Add, 

1 egg

1 cup gluten free bread crumbs 

  
Mix Well

Add 1 T red pepper infused sesame oil

1/4 cup chopped mushrooms

Add 1 scoop black bean mix shaped to burger, cook on medium high 5 mins per side 

 

looks great! smells better and the hot pepper infused sesame oil adds an awesome kick!

 

Serve & Enjoy

 

never thought that I would be excited for Burger Day!!

I know I Can… You can too

exhausted… From my head to my toes… I think I smell bad… The operating room is so hot and I sweat all day today… I try to think of it as Hot Yoga without having to look at 20 year old college students in their Lululemons… At one point today, I actually began repeating in my head “I know I can… I know I can”… Well 2 cappuccinos and a Starbucks refresher and I did it! Another rewarding day at work, home in time to see my beautiful kids and even….. Make dinner!!!!  I feel human again (stinky human, but a little water will fix that shortly!)!

Tonight I made a giant pan of gluten free macaroni (penne pasta) and cheese with a little twist! Kettle cooked chips on top! This may not be my healthiest creation, but it was fast, easy and oh my, my delicious!!!

Check it out!  

Recipe (the previously posted one but with the topping)

1 box penne pasta gluten free

Boil 8 mins, rinse and drain, set aside

1/4 c butter, melt in sauce pan

Add 1 t mustard (prepared)

Whisk in 1/4 c gluten free flour

Add 2 cups milk

Whisk until thick  ( whisking is just fun… Add wine… Even more fun… Unless you’re exhausted.. Then that’s it.. No Mac and cheese… Just Mac.. Cold)

Once thick, add 1 1/2 C sharp cheddar cheese, stir. Once smooth, pour over macaroni and stir

Top with 1 cup cheese and potato chips

Bake at 350, 20 mins!

YOU CAN DO IT! I know I can!

Mexican Meatless Monday! Cheese Flautas! Easy & Gluten Free

I’m kind of tired! I injured my ankle in an act of distracted walking and am a bit humiliated… According to my iPhone I walked 4.5 miles today in this boot, which I accept as my penance for a completely preventable accident. This dinner is so easy that I pull up two stools… One for me and one for “the black boot of shame” and in 15 mins, dinner is done!

First- I make guacamole…. See prior recipe… Delicious, nutritious and oh! So yummy!!! 

honestly… for me, this could be dinner !

Second- pop open bag of the all new “simply tostitos”. This is the first time I’ve seen these- my son picked them out at Publix and my kids loved them. Really great corn flavor! Less salt… Organic corn… Gluten free with clear labeling. Winner! (For chips…)

Third- lets get these flautas going!

You need:

Corn tortillas ( I use mission)

Veggie oil or olive oil

Monterey Jack cheese

Heat oil to medium high. Wrap 10 corn tortillas at a time in a cloth napkin, drip a little water on napkin and heat 1 minute on high in microwave.

Slice Monterrey jack into strips 1/4″ x 1/4″ x length of block (see photo) 

so easy.. 15 mins to your favorite dinner EVER

 Roll each cheese strip into tortilla and press to hold form. If tortillas are crumbling, place back in microwave for 30 seconds. 

rolling…rolling… rolling…

 

Fry, turning once to achieve golden brown. 

yep… there’s not a lot of fried gluten free food! enjoy this… unless you have high cholesterol… then dont…

Serve with chipotle, guacamole and chips!

Fiesta! And your family will celebrate with food like this!

Tonight marks the beginning of spring break for my 3 kids, and tomorrow they go on vacation with their Dad for a week, so I wanted to celebrate their well-deserved break with a nice dinner! I asked them if they wanted to go out (please?), but they voted for …..tacos! There are so many Mexican gluten free dishes to choose from… But this is my kids all time favorite! 

So let’s get started! The menu:

Homemade corn tortillas

Black beans

Rice

Guacamole

Grass fed ground beef (for the carnivores)

       In the interest of efficiency (as parents this is goal número uno) start the beans first. 

Black Beans

1/2 red onion, chopped ( chop the whole thing… You’ll use the rest for beef and guacamole)

1 tsp chopped garlic

I chopped potato

Mix in saucepan with 1T olive oil and salt and pepper until potato is browned

Add, 

1/2 c shredded carrots

2-3 sweet peppers, chopped roughly

1T Italian seasoning

After 2-3 min add 1 can of black beans

Add 1/4 c cilantro , stir

Reduce to simmer and cook until you are ready to eat (20 mins – 2 hours)



Ready , set, go!

Homemade Corn Torillas

Don’t be intimidated by a tortilla…these are easy, easy, easy….and handmade tortillas….ah…..heaven…great with butter, cinnamon & sugar, Nutella (what isn’t good with Nutella), and….yes….TACOS!

What you need…

A tortilla press (readily available on Amazon.com), corn flour (I use Maseca), salt & water

2 c corn flour

1 t salt

1 1/3 c warm water

Mix and knead….with your hands….you can skip therapy this week…and then roll into little balls, cover until ready to use.

Okay! Break time…all my veggies are prepped. Guacamole is made and in fridge, the brown rice is in the rice maker and…. it’s time for a swim!! To eat like this, a girls got to exercise! When I get home really late, I just continue on…the last part will take only 15 minutes. The first part should take you 20-30- depending on whether your children are running interference…..

When I get back, I brown the beef (feel free to omit this….I don’t eat meat..so I can’t even tell you if its good but my son says it’s awesome) with 1/4 red onion, garlic, 1T chipotle. Done!

Next press the tortillas, wrap your press in Saran Wrap, cook on med-high (no oil!) 50 sec per side, remove and wrap in towel.



put a little muscle into it… youre burning fat!



ok…i’m getting hungry again… i wonder if i have nutella



Ok! That’s it! Get ready for your fiesta…. You’re going to book a trip to Mexico after this one!

Peace On Earth….and at dinner.

If you have more than one child, you understand that dinner can erupt like a volcano of hot molten disobedience. Dining as a family has so many benefits, but honestly there are nights that seem like I’m a negotiator for the United Nations rather than a surgeon & mom.  So, a shout out to Macaroni’s Grill (@macaroniGrill) for reminding my family that dinner together can be fun! During a recent Disney vacation, we went to Macaroni’s Grill for dinner, where my kids (all of them) and I were enamored with the paper covered tables and crayons.  Now for you celiacs and gluten free fans, I safely enjoyed a Caprese Salad! 

Now, for special occasions, like tonight which marks the beginning of spring break for my kids, or if I sense that the natives are cranky, out comes the roll of IKEA craft paper (@IKEAUSA) and …..phew….. Dinner is fun, conversation pleasant and drawing abundant.

Sweet Spring Salad

In the mood for a delicious, nutritious, filling salad?

Gotta try this!

Organic mixed baby greens

1/4 c shredded carrot

1/2 c snap peas

1/2 c cherry tomatoes, quartered

1 Organic Daisy Girl Apple, cored & chopped

1/4 c rasperries

1 T chia seeds

1/4 c walnuts

balsamic glaze for dressing

gorgonzola cheese (optional)

Toss veggies, top with fruit, seeds & nuts, dress with Balsamic Glaze and

Yummy!
