Mexican Hacienda Wedding

March 26th,2016, we got married in a “backyard wedding” with about 65 guests…just family and friends that we consider family.. And we did it just like we wanted. …With tacos.

If celiac can sometimes be hard, it can make planning things really easy. Fernando and I occasionally spoke about some of the amazing weddings we had attended or heard of… Fireworks, doves released, arriving on boats.. Fernando always said he didn’t understand why you couldn’t just celebrate with friends, family and tacos. And tacos, my friends, are gluten free.

And so it started. Our favorite Mexican restaurant, located in south Miami, the MexZican restaurant and food truck, has a food  truck and/or catering side. (http://www.themexzicangourmet.com) They are amazing! Once we were set on that, the rest just came into play.

At our ages (we are old.), we really focused on how do we want to celebrate us? Colorful, fun, music, lights, family  LOVE … And that was it!

I tried to do it on my own… But arranging table rentals and dishwater etc seemed mission impossible on a working woman’s schedule. I found wedding and event planner extraordinaire Mercy Iglesias of LadyandLiv events, began ordering outdoor lighting from places like IKEA and lights.com, decided on purely paper flowers except one arrangement for the welcome dinner that I would also have at the wedding and my bouquet, which were made by ELENA, and went crazy on the website amols.com. Truly, a fun website… I ordered my girls flowers, all the decorations, sugar skull candies, all the table runners, the mustaches and sombrero for the photo booth… And then.. When the shipping costs were extravagant, I emailed them and they sent me a free shipping coupon!!! Holy money savers!!!

I ordered a whole bunch of tequila and decided to serve tequila shots in keepsake Talavera shot glasses at the door and create a signature margarita..a blood orange margarita made with blood orange juice, simple syrup, herradura tequila and vanilla extract.. Served on the rocks with a chili rim… Darn that’s good!!! Additionally, we ordered mini tequila bottles as party favors and decorated with stickers from Zazzle. 

I found a DJ using the Thumbtack app (I do love thumbtack and have used it sooo many times) and the party was rocked by Rodolpho Pessoa – who not just played great music but incorporated videos as well as a “light monogram” that scrolled “Holly and Fernando” over the Coral Gables Waterway until the wee hours… One word. Amazed!
It’s really amazing how much fun a backyard wedding can be.. Your style. Your budget. Our favorite people, things, drinks, music and food…. Just how we wanted it. A party for us, by us, for our families and  friends.

For photography, I chose a wonderful, artsy, talented photographer who really gets into the essence of the family in her work… Corinne Sheppo O’Connell.. She has taken our family photos before and I was super impressed by the way she was able to capture each child’s personality in the photo session… She starts talking to them about school, their dogs, their friends.. And next thing you know you have Real Images of your real kids. Not the fake family, the real one.. The one that you crave to remember at every age and stage… With that look in their eyes.. Wearing a tutu and cowboy boots… 

Well.. Anyway.. I spent a bit of time on Pinterest, scoping out “how to’s” and ideas that appealed to me. I found the cutest bar area made from a potting table and redesigned that for the “kid’s bar” with aqua de Jamaica and Jarritos (que buenos son!)
I also found so many great ideas for table decor with fairy lights and glass jars from ikea mixed with various shapes and sizes … Some with sand and succulents.. Others with gel beads and flowers… The possibilities just endless and all of them inexpensive! Now dessert…

My BFF just happens to be Misha of Mishas cupcake fame. We all know she’s got stellar talent, but she set up a dessert table to DIE FOR! A 3 tier wedding cake modeled after the Mexican hacienda theme (contained gluten, but Misha’s rocks the most amazing gluten free cakes and cupcakes!), gluten free Meringues, and cakes in the jar to go for each guest!


From welcome “shot” to dancing under the stars, to tacos set up in a  buffet brought in hot from a food truck parked in my driveway, I have never had so much fun at a wedding and I’m so happy that it was mine! It turned out just how we wanted… Tacos (they were sooooo good!), tequila, family & friends. Now that’s a way to celebrate a new beginning.

Molletes- caution! These contain gluten! 

These are one of my fiancé’S favorite foods and so I decided to give them a try!

 

molletes! easy, yummy, perfect!

 For the gluten free variety, I used Udi’s gluten free French bread so that I could share in this deliciousness! Yum!To have great Molletes, you need great bolillos. So let’s start with that! 

Bolillos! What you need:

2 cups warm water

1 T sugar

1 t salt

2 1/2 t yeast

Mix together and let sit for 3-4 mins

4 cups white flour

Stir in a bit at a time until a beautiful, soft, smooth dough is formed

Allow to rise 45 mins1 1 hour

Punch down and allow to rise 30 mins

Divide into 10 equal balls and shape into mini loaves

Cover and allow to rise 30 mins

 

rise up!

  

Brush with egg whites and slice 1/4″ deep 2-3 times 

Cook at 375 for 30 mins

The prep!

You need

A can of refried beans – I use old El Paso vegetarian 

Pico de gallo

3 tomatoes, chopped 

1 onion, chopped finely

1 jalapeño chili chopped

1/4 cup cilantro finely chopped

Dash salt

Juice of a lime

Mix well

   

 Top each side with beans, then pico de gallo, then queso fresco

Toast 5 mins under broiler!

Serve and Enjoy!!

I pulled it off! Quinoa Black Bean Burgers!

So, I’ve never successfully made delicious veggie burgers.. But ever since the World Health Organization came out with the health risks of red meat, my previously carnivourous children seem truly concerned about their Health and wellbeing. Seems odd, really. In fact, we went out this weekend and my son ordered cheese quesadillas rather than steak! Said me …. NEVER BEFORE!! The thing is that my kids are pretty athletic, and skinny and I want to make sure that they have meals they ENJOY and that provide enough protein and calories! All veggie all the time makes it hard to pack in the calories! But it can be done! Turns out that my son loves quinoa… I know… A 14 year old who loves quinoa.. I feel like I live in an alternative universe…

So, tonight I decided to try Veggie burgers again… And they turned out YUMMY!!! In fact they polished off the batch and asked for more!

So! Quinoa & Black Bean Burgers

 

yep… these rock!

 You Need

1 cup quinoa

Steak seasoning

1 can black beans (drained &grinder)

1 onion

Salt & pepper

1/2 cup Gluten free bread crumbs

Sundried tomatoes

Let’s go!

Cook 1 cup quinoa in 1  1/2 cup water with dash salt

 

onions and tomatos getting hot and sweaty

 In another pan sauté chopped onion, sun dried tomato. Add salt and pepper – some red pepper flakes if desired-and then add 1/2 can black beans, 1 cup water and saute until Water absorbed – after about 10 mins I gave up on water absorption and added half of the quinoa and simmered 5 more mins.

 Process this hot mess until smooth. Add it to remaining quinoa and other 1/2 can black beans and about 1/2 cup gluten free bread crumbs. 

 

Hot, delicious, mess

 
 Scoop onto well oiled cookie sheet and bake at 500 degrees for 10 mins each side.

 

scoop it onto pan and get ready for some healthy deliciousness

 Serve on bun (gluten free or regular) with cheese and whatever burger toppings you love!

Meatless Monday takes a Tex-mex twist!

The holidays are over… 2016 is here! And my kitchen makeover that I’ve taken on is halfway done! Let me tell you.. Refinishing cabinets is not light duty and the blogging definitely suffered! But while I wait for some cabinets and countertops, let’s get back to cooking it up gluten free!

  So, here’s what you need!
1 cup cooked quinoa- I cooked 1 cup with 1 1/2c water, 1/2 t cardamon, 1/2 tsp salt 

2 sweet potatoes – sliced (with my amazing new spiralizer!!! Love it!!)

1 red onion – chopped coarsely 

5 sweet peppers – sliced 

Salt, pepper, italien seasoning, red pepper

Sauté it up with 1 T olive oil

 

Uh oh … The cooktop is dying.. Down to 1.5 units with no temperature control:( …hence the remodel!   

Sweet potatoes, red onion and red peppers… They go together like sugar and spice and everything nice! 

1 package corn tortillas – I like Mission

3 cups shredded cheese- Monterey Jack 

1 can refried beans

1 jar of salsa verde

LETS GO!

Step 1-Layer tortillas in pan  

Step 2- Spread on refried beans (about 1/3 of can)  

Step 3- Layer on quinoa, veggies and cheese

  
    

Step 4-Repeat! 

   
Step 5- Pour on the salsa & cover liberally with cheese!

Step 6- Cook 350 for 30 mins!

Yippee! Enjoy! This turned out great! Super delicious!

Remember! No one does awesome like you do! Get out, get active, get happy… No one is going to do it for you!

Happy Holidays! Tips & Tricks to making through the Holiday Party Season!

You know it as well as I do… Dinners out, holiday parties, gift boxes of food in the office, schools … and sometimes you just don’t guess that the food contains gluten… And truthfully… It’s no fun to be wrong!  Every holiday, and unfortunately it seems that this one is no exception, I make a mistake and get to spend some quality time with my porcelain goddess… “Worshipping”. She seems indifferent to me.. But I despise her and the bloated, painful, refluxy gluten belly that I then own for at least a week. Been there? It doesn’t have to be this way! If you stick to some simple guidelines you can make it through party season unscathed!

This December, I started out with a weight of 136-37… But after 2 holiday parties in which I did not follow my recommendations, and a chocolate covered potato chip misadventure (they were almost worth it), I’m 132 and eating yogurt 2 of my 3 meals a day.

So… How can we avoid (and for those of us with celiac or gluten intolerant kids… Help them avoid)

1. Don’t go hungry

Busy day.. Party at school lunch so kids don’t bring lunch.. Don’t get to the party hungry.. As the event drags on, maybe you have a drink or two… You become increasingly hungry and less likely to avoid questionable food. Bring a snack or try to eat beforehand. No one has good judgement on an empty stomach!

2. Avoid dark lighting!

If you are going to eat at the party, make sure you can see the food well! Is there salad dressing? A sauce on the meat? A glaze (almost always soy!!!) on the salmon??

If you can’t see it, don’t eat it!

3. Don’t be afraid to ask!

If there is wait staff at the event, ask if they are aware of the ingredients, or if it’s the class party, ask the preparer! All you have to do is say “wow! That looks sooooo good! How did you make it?”

4. Don’t believe what they say! 

Ok it’s true… You ask “is the salad gluten free?” And the waiter says “I can leave out the cheese… Just for you”… 

Take out my cheese and you are risking your life, buddy. Watch the response… Any glimmer of doubt… Don’t do it!

5. Bring a dish to share!

Office party, class party, dinner at a friends house? Bring a dish to share! That way you will be sure to have something to eat!

6. Avoid frozen mixed cocktails and mocktails! 

Do you know how many people add a beer to margarita mix for fizz, flavor and a little extra kick? Mixes for Daiquiris can also contain gluten. Stick to straightforward juice, water, soda, simple mixed drinks or wine. And come on, everyone… Call an uber!

7. Don’t forage! 

The nurses stations at the hospital and the kitchens in offices across the nation are riddled with candies, cakes, cookies and treats. Don’t do it!! I was saved by a nurse handing me a sweetened, labeled gluten free rice cake while foraging through the chocolates reading all the labels and convincing myself that “processed in a facility that also processes wheat” has a pretty good chance of being safe. The amazing thing is that this was just a couple days after I ate the very delicious and severe abdominal pain inducing ho chocolate covered potato chips with that same warning… Some of us never learn…

8. Search for gluten free restaurants!

Open table even has a gluten free search and there are apps as well. Our office had our holiday party at a Brazilian steakhouse… The bread was pao de queijo (gluten free) and while I don’t eat meat.. The salad bar was amazing and they had flan and Creme brûlée as gluten free dessert choices! yum!!

9. Bake, create, & enjoy!

There are so many gluten free recipes and products now that you can have wonderful, delicious, satisfying meals, snacks, drinks & desserts!

Thanks Mom! Zucchini Caprese Salad

Moms are great for so many things and my mom certainly was and is a role model to me in so many ways. One thing she can always do is produce an innovative, healthy, delicious meal at what seems to be a blink of an eye (probably because while she’s slaving away in the kitchen, I’m goofing off).  I was chatting with her last week and telling her about my new spiralizer and she sent me a great recipe… Which I promptly lost… But I think I’ve got the basic idea… The end result was delicious and this is truly healthy food at its best!!

 

zucchini caprese salad! yum!

 
Zucchini Caprese Salad (feeds 6)

16 oz mozzarella cheese, cut into cubes

2 T garlic, chopped

1 large handful of basil leaves, chopped

Pepper

1 can Rotel chopped tomatoes with chilies- mild

4 large or 6 medium zucchini, ends removed and spiralizer with small spiralizer

Almonds, salted, roughly chopped

1 c green olives,  chopped

Olive oil

Ok!! Let’s go!

In large bowl, mix

Mozzarella, garlic, basil, 1 T olive oil, pepper and oilves 

basic ingredients ready to go!

Spiralize zucchini and then sauté on medium high heat with olive oil and pepper to taste for 3-5 mins

Add tomatoes and cheese mix and toss.

Plate and top with almonds.

Enjoy!!!

Project- Oasis by the Pool. If I can do it… So can you!

I love to hang out with my kids in the pool.. And their friends and so on.. For hours and hours. And, as you may know, I’m the “pool gal”. So I deleaf, de green and in general try (sometimes unsuccessfully) to keep my pool beautiful.

I decided that the pool area was missing a little something…. It lacked that feeling of “oasis”. It was plain Jane. Now nothing takes “oasis” from me faster than the thought of paying someone to renovate, so I tried to come up with less expensive concept. I settled on re arranging existing furniture to de clutter the patio and creation of an accent wall with bright paints and Mexican tiles. 

  
Step 1 Choose the Color

I decided to go bright blue… Like the color of painters tape… At first it seemed too drastic, but by morning, I was in love!

 

Boring! well nothing like a blank canvas to start with!

  

ok.. it didnt look this blue in the can… iI told myself it would be ok since i live in Miami , and we paint walls lime green here.

  

one coat done, one to go… at this point i honestly thought i had heatstroke…

 
Step 2- How do you Tile?

Well I went on line… And as I only wanted an accent line, this was easy. Choose tile, grout and go!

I got beautiful tile from “Direct from Mexico” with free shipping and great customer service.

Step 3- Decorate

I repurposed a bench and painted it the same blue as the wall with a little accent paint.

i didnt have red or pink paint… but I’m a Florida Gator.. so the orange stays!

 
I found some large clay pots at HomeDepot for less than 20$ each and added some pretty plants.

 Finally, I moved around the furniture to provide seating in the shady areas around the pool.

comfy, relaxing, practical and ahhhh… it feels like home and I’m happy!

 
Step 4- celebrate! 

It’s time to enjoy the oasis! Little changes can have big effects!

15 Minutes to Dinner

Yep.. Everyday there is a countdown… Work, home, straighten up a bit.. Cook. You know the drill. But the cook part to me is fun. Time to be creative.. Work out a little stress on the dough (I make regular bread for my kids routinely… You can’t really take it out on a gluten free dough… You’ll get trapped like a fly in a spider’s web)

 A few weeks ago I had the most delicious meal at a restaurant in Miami named,  “Love is Blind”. It was “I can’t believe it’s zucchini… Or something like that… Well over the past few weeks I’ve tried slicing, dicing, shredding and peeling zucchini without success… But tonight, TONIGHT… I’ve brought out the BIG  GUNS (actually.. I’m against guns in the home)… I got a kitchenaid spiralizer!!!!

 A moment on Kitchenaid… My parents have the same mixer they’ve had since they were married…Kitchenaid  rebuilt the engine once. I have Always enjoyed cooking and in college when my parents were going to buy me a class ring, I politely requested that they use that money for something I would value and use… A Kitchenaid mixer. No! I’m not kidding. 27 years ago…. Oh my god… Ok, I’m in crisis mode… I cannot possibly be that old…

Well that machine is going strong.. And this week I ordered (with my 20% off coupon) the Kitchenaid spiralizer!!!

LOVE IT!

So the recipe!!

Tomato Sauce

1 onion chopped

1 T garlic

Sauté in 2 T olive oil

Add 1 cup sliced sweet peppers

1 t salt

Pepper to taste

Dash red pepper flakes

2T Italian seasonings

Once cooked add

1 box Pom strained tomatoes

1T sugar

2T chipotle salsa

Allow to simmer

 

onions, garlic and seasonings getting sweaty

  

if you like it baby, put some pepper rings in it

  

sugar

  

spice… makes everything nice

 Zucchini 

Spiralize the Zucchini

In large pan, add olive oil

1 tsp garlic

Add zucchini and fry 3-5 mins

Top with sauce, mozzarella and Parmesan if desired!

 

better than pasta…

Pumpkin Pie Muffins- gluten free! … And a little bit about October…

October is my favorite month. To me, October means it’s time to change… Maybe like spring time for some (well likely most everyone). Full harvest moons that light the waters of Miami, sending sparkling waves across the black night water. The intense humidity and stifling nights are replaced with breezes with just a hint of coolness. The kids are settled in their school routine.. the anxiety reduced to intermittent episodes – usually regarding some forgotten homework assignment and, of course, there is Halloween, pumpkins and candy EVERYWHERE!   Time change, night comes earlier… Out with the summer and in with the fall… And let’s make it a good one!

I’m in a bit of a funk today, maybe too many loads of laundry… Maybe it’s sensing that change isn’t easy for everyone… Or even desired… Or even desirable! You have to know what’s right for you and make changes that are needed, beneficial.. Healthy. Change isn’t easy. All day (actually all week) I’ve had “when I grow up” from Matilda stuck in my head. Such an incredible song, but really aside from the humor in it, there’s some good advice… “If you always take it on the chin and wear it, nothing will change” and “just because I find myself in this story, it doesnt mean that everything is written for me”

Get out there and write your story. Make it a happy one.  If you need some energy and inspiration, snack on these incredibly delicious vitamin A packed muffins!

  

Base

2 1/2 cups Pamela’s pancake mix

1/2 cup Cold water

1 egg

2 T sugar

1 tsp salt

1/2 c butter or shortening 

Mix dry ingredients, cut in butter, mix lightly until small pea sized areas of butter remain

Mix in wet ingredients together

Press balls of dough into bottom of greased muffin pan

   

 
Filling

1 can pumpkin pack

1/2 cup sugar

2 eggs

1 cup evaporated milk

1 t pumpkin pie spice

2 cloves

1/4 t ginger

Whisk well then add to muffin tins to fill.

  

Topping

1/4 cup gluten free oatmeal

1/4 c brown sugar

1/2 c walnuts

Dash pumpkin pie spice

Mix and sprinkle over

Bake at 350 for 20 mins or until toothpick comes out clean

Allow to cool 5 mins and then remove from pan

Meatless Monday! Garden Soup, bread & Brie!

This weekend we had a couple get togethers and I was in charge of veggies and dip! (Woohoo! That’s the easiest!) At the end of it, I crammed the remaining celery, carrots and snap peas into a Tupperware container and thought….soup. Yes! …. Okay…So, what I really wanted was bread with Brie… But somehow I needed veggies and the soup completed the meal! 

First stop.. The freezer section.. Udi’s has multi grain and French bread that are gluten free. Tonight I went for the multigrain! yum!

Second stop… Brie…(yummmmm). I’m pretty sure my kids think Brie is butter. 

Third.. Kitchen

Here’s what you need

1 onion – chopped- quickly to avoid the crying

2 T garlic

1 sweet potato chopped

Toss these in big pot with some olive oil and sauté a few minutes on medium high

Add

1 cup shredded or coarsely chopped carrot

Leftover celery- chopped – maybe 1/2 c?

Leftover snap peas- cut into thirds about 1/3 cup

Any other veggies you have

Add to pot,

Add 3 T Italian seasoning

2 t salt

1 red pepper flakes

1 can garbanzo beans, rinsed

Sauté for about 10 mins

Add 4 cups dilute veggie bullion (2 cups bullion, 2 cups water) 

Cover and turn heat to low

15 mins before serving add 6 oz gluten free penne pasta

   
Serve and enjoy!❤️
